In the last episode, I mainly introduced some of the staple foods that Beijing residents love. Today, I’d like to share with you three of the most beloved snacks among locals.
1. 炒肝(Stewed Liver and Intestines)
Stewed Liver and Intestines is a traditional Beijing snack, primarily made from pork liver and pork intestines. It is cooked with minced garlic, soy sauce, vinegar, and other seasonings. The dish features a rich, thick sauce, tender liver, and crispy intestines. It is flavorful yet not greasy, making it a popular choice for breakfast or a snack among old Beijingers.

2. 豌豆黄(Mung Bean Cake)
Mung Bean Cake is a traditional Beijing springtime dessert made from high-quality mung beans. The beans are boiled, peeled, stir-fried with sugar, and then set into a soft cake. The finished product has a light yellow color, a delicate texture, and a sweet, fragrant flavor that melts in the mouth. It was once a favorite imperial snack of Empress Dowager Cixi.





3. 驴打滚(Donkey Rolls)
Donkey Rolls is a traditional Beijing snack made from glutinous rice flour and red bean paste. The outer layer is coated with roasted soybean powder, giving it a golden appearance. The texture is soft and chewy, with a rich bean fragrance and a sweet, non-greasy flavor. It is a beloved traditional dessert among Beijing residents.
